AI enters everyday operations
AI and data-driven tools are increasingly being applied across the FoodTech value chain, from demand forecasting and agricultural decision-making to product development and recipe optimization. At the same time, fragmented data and varying levels of AI maturity continue to limit the ability to translate technological potential into improved forecasting, reduced waste and scalable digital initiatives.
Alternative proteins move toward scale
Alternative proteins are entering a new phase. Plant-based, fermentation-derived and cultivated products remain important areas of innovation, but attention is increasingly shifting from concepts and hype toward industrial scaling, commercialization and cost efficiency. New production methods must also operate within food value chains largely designed around conventional products.
Sustainability becomes a business requirement
Sustainability is moving from a brand differentiator toward a regulatory and commercial necessity. Requirements such as CSRD and PPWR are increasing expectations around reporting, packaging and traceability. For food companies operating across large supplier networks, this development also increases the importance of transparency and coordination throughout the value chain.

Reducing waste becomes a business priority
Food waste is becoming both a sustainability priority and a profitability concern. 13% of food is lost before retail and an additional 19% is wasted at retail and consumer level. Poor forecasting, limited inventory visibility and inconsistent waste streams make reduction difficult across connected value chains. At the same time, recycling and upcycling are becoming increasingly important parts of the FoodTech ecosystem.
Health reshapes consumer demand
Growing interest in protein enrichment, gut health and personalized nutrition is expanding the boundaries of FoodTech. Consumers are increasingly seeking healthier, functional and more personalized products, bringing FoodTech closer to HealthTech. As preferences continue to evolve, understanding consumer needs and adoption becomes increasingly important for emerging food categories.
